What We Spent and What We Ate: Recycled Lunches

This week we spent $227.00, but $75.oo of that we spent on our trip to Prescott.  We ate at Maya– I got the chicken mole enchiladas and they were perfect.

Since school starts in the Madison district on Monday, we’re trying to get in the habit of making lunches in the morning.  For the rest of the week, I doubled our  dinner recipes so I could use the leftovers for the next day’s lunches (and even freeze some).  I also prepped all our vegetables as I was making dinners–it’s much easier to chop three onions in one sitting than to chop one every night.  Ditto bell peppers, celery, and cucumbers.  Here’s what we came up with:


Monday:  Leg of lamb, yogurt mint sauce and baba ganoush

Lunch Tuesday: Pita chips, baba ganoush, hummus and yogurt dip


Tuesday: Chinese meatballs with Chinese noodles and broccoli

Lunch Wednesday: meatballs and broccoli


Wednesday:  Einkorn spirals with pesto and salami and a garden salad

Lunch Thursday:  Pasta salad with pine nuts and red peppers


Thursday:  salmon, sauteed summer squash and quinoa with red peppers

Lunch Friday: quinoa salad with cranberries, summer squash and feta cheese
